      Unlike many fruits, coconut contains liquid water inside it, which can be used for drinking (especially in hot climates!). The next layer is the flesh, which can be eaten and is also used to extract oil and milk. And finally there is the shell which I think is made of similar material to tree trunks, i.e. plant cells surrounded by cellulose.
